The Recipe That Made Me Glow Again

There was a time in my life when I felt… dim. Not broken, not ill — just off. Like I was going through the motions in grayscale, when I remembered life being in color. My energy was low. My skin? Dull. My sparkle? Missing in action.

I was eating “healthy” by old standards — protein bars, low-fat yogurt, salads with bottled dressing. But nothing was really nourishing me. Not on a soul level. That’s when I decided to go back to basics. Whole foods. Real ingredients. Nothing from a box with a barcode I couldn’t pronounce.

And that’s when I discovered this recipe: my Glowing Golden Bowl. The dish that truly flipped the switch.

A Turning Point in a Bowl

Bowl of vibrant orange soup with chunks of sweet potato, cauliflower, and kale leaves. Set against a white patterned background.
A vibrant bowl of glow-up soup featuring hearty chunks of sweet potatoes, tender cauliflower florets, and fresh greens, all infused with the warm spice of ginger.

It started on a rainy afternoon when I felt the need to reset — not just my body, but my mood, my mindset, my whole vibration.

I went into the kitchen and gathered what I had:

  • a head of cauliflower

  • a can of organic coconut milk

  • some turmeric

  • fresh ginger

  • bone broth

  • a sweet potato

  • and a big bunch of spinach

I didn’t know what I was making yet. I just followed the energy of the moment. It came together into something beautiful, golden, earthy, and nourishing.

Glowing Golden Bowl (Helen’s Glow-Up Soup)

Ingredients:

  • 1 tbsp coconut oil or olive oil

  • 1 head cauliflower, chopped

  • 1 large sweet potato, peeled and cubed

  • 1-inch piece fresh ginger, grated

  • 2 cloves garlic, minced

  • 1 tsp turmeric

  • 1/2 tsp ground cumin

  • Sea salt and black pepper to taste

  • 1 can full-fat coconut milk

  • 2 cups bone broth or veggie broth

  • 2 big handfuls of spinach or baby kale

  • Juice of 1/2 lemon

  • Optional: hemp seeds, chili oil, or microgreens for garnish

Instructions:

  1. Heat oil in a large pot. Sauté garlic, ginger, and spices until fragrant.

  2. Add cauliflower and sweet potato. Stir to coat in the spices.

  3. Pour in broth and coconut milk. Simmer 20–25 minutes until veggies are soft.

  4. Add spinach and lemon juice. Let wilt for 2–3 minutes.

  5. Blend with an immersion blender (or in batches) until creamy.

  6. Serve hot with your favorite toppings.

What Happened After That Bowl

I kid you not — the next morning, I looked different. My eyes were brighter. My skin looked dewy. I felt calm and capable instead of scattered and tired. That was the start of my real glow-up. And I’ve never looked back.

Now I make this soup at least once a week. It’s like pressing reset on my whole system — with a spoon.
